Mark made our dinner tonight, you can have this on the table in 30 minutes or less.  It was yummy & fresh, perfect for this time of year!!!!  The photo doesn’t look like it, but this served 4 for dinner If you make it, please followup with your comments!

What you’ll need:

1/2 lb baby arugula

1/2 lb cleaned baby squid

1/2 pint cherry tomatoes

1/2 bunch of asparagus, cut diagonally into 1 inch pieces

1/4 red onion, slivered

3 slices fresh pineapple

2 cloves of fresh garlic, chopped

sea salt, pepper & olive oil

1 fresh lemon

lay arugula on serving dish, set in the fridge

drizzle squid with salt pepper & olive oil

drizzle pineapple with salt & olive oil

in saute pan add 1 tbs olive oil, heat & add garlic & asparagus.  Sautee for 5 minutes, add cherry tomatoes & red onion.  Season with salt & pepper, saute for 3-4 minutes.  Remove from heat.

Grill pinapple & squid 2 minutes on each side.  Add squid to sautee pan & toss, pour over arugula.  Julienne the pineapple slices & serve on sides of plate as a garnish.  Squeeze half a lemon over the top of your salad & drizzle with olive oil.

Serve Immediately & ENJOY!
