Hi there, and Happy Monday! If you’ve been following the blog for some time, then you know that there has no been absolutely no shortage of avocado toast up in here. Its delicious, its pretty in pictures – its pretty much perfection. I’d like to point out that I’ve been snacking on this loooong before it started popping up on brunch menus all over NYC (yes, bragging), but that doesn’t change the fact that I am so pleased to see that it has become all the rage! Avocado toast tastes good, sure, but I feel that people still are wondering if it is good for you. I’m here to tell you why you should be eating avocado toast. Every day. Until the end of time. Yes.
Avocados (in moderation) are a great addition to any diet. Recommended intake is around 1/3 a large avocado, or what I like to do is buy small ones and have 1/2 a day. Store the other half in the fridge overnight in either an Avo Saver or tightly sealed container to maintain freshness. Avocados should be green, and if not stored properly they will turn brown and mushy! No bueno.
The deal on avocados:
Contains healthy monounsaturated fats (code for heart-healthy “good” fats), iron, vitamins A,C, E, and K, potassium AND fiber. Um, hello, you had me at good fats.
Choose either a sprouted grain, whole grain, or gluten-free bread of a choice and lightly toast. After smearing some avo on there, I add Himilayan sea salt (the only salt I will add to my food all day) and red pepper flakes. The large flake sea salt in addition to the buttery texture of avocado + the crunch of toast is to die for. I’m telling you. On days when I have a little more time to spare I will add a fried egg with sriracha or build and open-faced sandwich with smoked salmon.
As a meal itself or just a quick snack in between meals, this combo will satiate you for quite a while, stabilize blood sugar and be amazing with every bite.
