Mondays off from work = heaven. I know I’ve said this before, but there is something just so wonderful about having Mondays off. Actually, there are a lot of wonderful things about it. While everyone else’s weekend is winding down on Sunday, forcing them (you?) to prep for the week ahead, I’ve still got the day to be lazy, go to brunch, visit fam in CT..whatever. When I see everyone’s Monday morning “hatemylife” posts on Instagram, I’m just like “Ha, Ha – not me!”. I know, what a Grade A jerk I am. But I work most weekends! Can’t win em’ all.
Anyway, I thought I’d walk you through a day of eats with me since I had the time to get some good photos. If you know me at all, then you know I eat a LOT. I do try to always eat well, but of course there are some slip-ups on a daily basis. For instance, the personal pizzas Tommy and I have been making so frequently at home. But hey, we’ve got one life to live..and who am I to turn down a homemade proscuitto, tomato, basil & mozzarella pie?
I also try to work out regularly (at least 3x a week), and in typical dramatic-chick form if a week goes by (like last week) where I didn’t make it to the gym I’m all “OMG I HAVEN’T BEEN TO THE GYM IN FOREVERRR”.
So on this particular Monday, I decided to go into fitness full force for the next month with an unlimited month at Union Square’s Pure Barre. I had some Nature’s Path oatmeal with a drop of honey at home and then was on my merry way.
This workout is hard. Extra hard. It works muscles that I literally forgot I had since the days when I was at the ballet Barre. My muscle memory needed a little awakening, that’s for sure. But I am so glad I decided to get the unlimited month, and can’t wait to see some results.
After Pure Barre, I was starving but knew that I had plenty of food at home..so I made a pit stop into Whole Foods (Whole Paycheck as mom likes to say) for a snack at the hot bar. I also picked up some Blue Print juices and some bread.
Even though Pure Barre is low-impact and not a cardio blast, I will still use any workout as an excuse to have a “PW recovery waffle”. I used my trusty Nutri-Bullet to whip up a Spinach and Carrot juice to go along with a whole grain waffle, that admittedly looks a little funky in color and texture thanks to heaps of powdered peanut butter & cinnamon added to the mix. I assure you, it was still delicious. I used the Nutri-Bullet again to make a blueberry and raspberry compote (warmed up in the microwave) and topped with coconut and agave. Since I had the oatmeal for breakfast, I guess this makes Brunch? Anway, waffles – you complete me.
After the waffle, I was obnoxiously full and saw this a good opportunity to run a quick errand. Quick, as in across the street to Duane Reade. Hey, whatever man. I needed any kind of walk after that massive waffle.
I took the next hour or two to organize some of my closet and get some boring health insurance stuff taken care of, and then it was time for me to eat again!
My second lunch (although it was late afternoon – does that make it Linner?) was a bit lighter, and of course it included a fried egg. Delicious buttered toast, salad with pecans & goat cheese, and a stack of sea salt & garlic pretzels. I actually had about 20 more pretzels than the ones pictured [weakness], however portion control makes for a better picture, wouldn’t you say?
So damn good.
I had to run out for a another hour or so, and when I came back it was time for some fage Greek yogurt, a banana, a yummy juice and some light reading. It was BITTERLY cold out again, and I was thankful to get back inside and sit by the window with some sunshine for a few minutes.
A second coffee of the day and a few more hours of putzing around on the computer brought me to dinner.
I had a turkey burger, spinach & broccoli sauteed in coconut oil over a bed of quinoa and smothered with Sriracha. Mmm, mmm. This bowl of goodness has become a favorite of mine and takes 5 minutes to make.
After a piece of Chiradelli chocolate, some pineapple and some tea, it was time to call it quits! I got a great workout in, plenty of veggies, the good fats and a good amount of sugar from fruits. Overall, a great Monday on the health and fitness front.
