• 2 lbs ground buffalo meat
  • 1/2 spanish onion, diced
  • 1/2 cup diced baby bella mushrooms
  • 1/4 cup shredded pepper jack cheese
  • 1/4 cup ww panko breadcrumbs
  • 2 eggs whisked
  • 2 tbs chopped fresh cilantro
  • sea salt & pepper to taste
  • 10 ears fresh corn with husks on
  • 2 heirloom tomatoes, sliced thin
  • Remainder of onion sliced thin
  • 1 cup arugula
  • Cinnamon to taste

This is by far one of my favorite summertime recipes.  The baby bella mushrooms keep the burger moist while bulking it up.  Chloe’ didn’t know I added cheese into the burger, so she topped a few with the classic American cheese.  Grilling the corn was a firsts for me, so I threw it on the grill and hoped for the best :)  Turns out, it was sweet, moist and amazing!

This was our Mother’s Day meal.  I’m not a go out, restaurant brunch kinda mom.  I’m more, picnic together or stay at home and eat.  Mother’s Day this year was a beautiful day and with summer on the horizon, simple grilling was the first thing that came to mind.

Ava introduced me to the most amazing thing….Cinnamon on corn!  Hello, this is a must try.  We don’t use butter, so dry corn it is.  The pop that cinnamon offers, is indescribable.  With the smoky flavor of the grilled corn, I don’t think I’ll ever have it any other way.

We opted for sliders this time.  Whole Foods has whole wheat slider buns available throughout the summer.  Really, one is enough.  Whole sized burgers are more than you need when you couple them with sides.  But, if you’re still hungry, you can have two and not wreak havoc on your diet.  We also offered white buns, as you know, Mark’s kids aren’t big fans of clean eating and my step dad is on the fence.  This was a day of peace for all :)

You may know we’re huge fans of runny eggs on virtually anything, but on a burger…YUM.  It takes the place of mayo and adds an insane decadence.  If you haven’t tried it, trust us, you’ll love it.  We also offered, tomatoes, sliced onions and baby arugula as burger toppings.

We paired this meal with a whole wheat pasta salad.  We’re going to share that recipe in another post, so you have something healthy and awesome to bring to your next summer BBQ!

Onto the recipe:

Heat grill on high for 15 minutes

Meanwhile, combine buffalo meat, shredded pepper jack, baby bella mushrooms, diced onion, panko, cilantro, sea salt & pepper, with whisked eggs in a large mixing bowl.  Shape into 12 slider patties, set aside

When grill is hot, place corn in husks on grill.  This should take about 30 minutes.  You’ll want to turn the corn half way through.

At the half way point, add your burgers, and cook to desired temperature.
