• 2 boneless skinless chicken breast, fat removed
  • 1 loaf ciabatta bread
  • 1 bunch fresh basil
  • 1/4 cup pesto, we make our own, but you can purchase it in your local market
  • 1 garlic clove sliced thinly
  • 1 ball fresh mozzarella
  • 1 heirloom tomato
  • 1 fire roasted pepper, skin removed. You can make your own or again, purchase at your local market
  • 1 cup fresh baby arugula
  • sea salt & pepper
  • extra virgin olive oil

This is our go to sandwich for a day at the beach.  When I was making this Monday for our family day at Watch Hill, I realized I’ve been making this sandwich for at least 10 years.  I had a flash back to our West Haven house and the first time I made this.  It’s been a hit ever since.

The great thing about this sandwich is that it travels well.  I think it’s due to the fact that you toast the bread prior to adding the components and you broil the cheese.  This keeps the bread from getting soggy.

For this trip we had quite a large group so I made 3 sandwiches using multigrain, whole wheat and a white ciabatta, something for everyone.  The recipe is for one loaf, which yields 6 pieces.

heat oven at 350*  slice ciabatta loaf in half lengthwise.  drizzle with extra virgin olive oil spread sliced garlic on top.  Heat in the oven until just golden, about 15 minutes.  Remove from oven and set aside

preheat grill to medium heat

Clean chicken, toss in olive oil, salt & pepper, grill about 6 minutes on each side depending on thickness.  At the same time, add your pepper to the grill, char on all sides, set aside to cool.  Once your pepper is cool enough to handle, run under water to remove the skin.

Prepare your ingredients for easy assembly.  Slice chicken into pieces.  Cut pepper into strips.  Slice mozzarella into pieces.  Tear basil off stems.  Slice tomato.

Now the assembly.  Layer arugula, chicken, pepper, tomato, basil & mozzarella.  I put the tomato between the chicken and the basil to avoid moisture on the bread.  Spread pesto on top half of loaf

carefully return the sandwich to the oven to melt the cheese.  Once cheese is melted, remove from oven.  Top your sandwich and slice.  For easy travel, we wrap each sandwich individually.

Pair this sandwich with some fruit or a light orzo pasta for a meal.
