- 2 Bananas
- 1 cup oats
- 1 scoop protein powder
- 1 handful pepitas
- Almond milk
Well, Well, Well. Thanks to Diva Hurricane Sandra, this New Yorker has found some time to bake some goodies. Baking – what a foreign concept to me. Let’s be real here..I don’t know many people that bake in NYC. I don’t know many people that even COOK in NYC. Lack of space, lack of time. Too many ingredients. These protein muffins were SO quick, SO easy, and made with less than 5 ingredients. I can’t wait to play around with more simple recipes.
Grab a big bowl and mash 2 bananas with a fork. Add 1 scoop chocolate protein powder of your choice and some almond milk. Stir up until the consistency is right, and dash some cinnamon in if you wish. Add one handful of pepitas and 1 cup oats and keep stirring! DONE. I originally got the idea in my head to bake something during this hurricane thanks to the TIU girls and their 3 ingredient cookies. But instead of cookies – I wanted muffins! They turned out to be DELICIOUS.
Preheat oven to 350* Spray muffin tin with non-stick spray and simply scoop your protein-y goodness mixture in.
17 minutes later you’ll have perfectly sized muffins that are sweet, crunchy, moist and warm. I had two immediately. If you’re enjoying these muffins for breakfast or after a workout, you can cut them in half and add a nut butter of your choice. Yuuuum.
Obbbbbviously a glass of milk is necessary!
OK, I hear Sandy getting angry outside. Time to go back to eating every half hour and watching bad TV in hopes we don’t lose power. Hope everyone is safe. Xo
