• 1/4 cup coconut flour
  • 1/4 cup + 1 tbsp vanilla protein powder
  • 1/4 cup cacao powder
  • 1/4 cup unsweetened apple sauce
  • 2 tbsp organic PB
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/8 cup coconut sugar
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract
  • 3 tbsp coconut oil
  • 3 tbsp almond milk
  • 1/4 cup coconut shreds
  • 1/4 cup PB chips

This is how this went.  Me (Ava): I want cookies! Let’s make healthy cookies!  Chloe: OK, let’s go to the kitchen.  YES.  Easy peasy.  Let me preface this post by saying that I am NOT a baker.  I’m not really a sweets person either (carboholic baby), so this is not an issue. However, every once in a while the mood strikes.  Luckily, I was at my mom’s house which is equipped with baking ingredients, and also has plenty of space.  FYI, baking in an NYC apartment is not something I find fun.  So I cannot take credit for this recipe, it is all Chloe! All I did was grab the things she needed from the cabinet and then put them away after :)

These were an awesome mix between a cookie and brownie – crisp on the outside and super moist on the inside.  They were teeny tiny, so we’ll call them “bites”! I completely submerged mine in coconut almond milk before popping them into my mouth.

Follow this recipe for a post-workout protein snack or a yummy and healthy option to serve as dessert.

*Mix together the dry ingredients until there are no lumps – Add the rest of the ingredients except for coconut flakes & PB chips – Mix, then fold coconut and PB chips last.
