- 1/4 cup pine nuts
- 1/2 cup baby spinach
- 1/2 cup grated parmesan cheese
- 1 garlic clove
- 1/3 cup olive oil
- 1/4 cup marscapone cheese
- 1 cup frozen peas
- 1/2 whole roasted red pepper diced
- 1 lb whole wheat pasta
This is another Fit Girls recipe compliments of Chloe’. It’s been a heck of a whirlwind two weeks at our house, leaving no time to cook. The thing is, we all really enjoy cooking. So, on our first day off we purged the fridge and hit the grocery store.
Chloe’ whipped this up while I put the groceries away. It’s so nice to have multiple cooks in the house, especially clean cooks! This hit the spot. It’s full of fresh vegetables, good for you monounsaturated fats from the pine nuts and extra virgin olive oil and a great complex carb in the whole wheat plus flax pasta. Everything clean eating should be.
This is the perfect “meatless monday” meal.
Cook pasta according to package directions.
Dice roasted pepper
Combine ingredients from pine nuts to olive oil in a blender, blend until a smooth pesto paste is formed
place frozen peas in colander, strain pasta over to thaw
add pesto, peas, pasta, marscapone & baby spinach to a large bowl. toss with sea salt & cracked black pepper to taste…..I add crushed red pepper to everything, it’s a great metabolism booster. Enjoy!
