• 2/3 Cup Brown Rice
  • 1/4 tsp ground turmeric
  • 1/2 cup fresh sugar snap or snow peas
  • 4 4oz lean boneless pork chops
  • 1 ttsp low-sodium soy sauce
  • High heat cooking oil
  • 1 red bell pepper, halved lengthwise and seeded
  • Olive Oil cooking spray
  • 2 3/4 inch thick pineapple rounds

Whatup mama’s? Ava here.  I am in CT the past 24 hours and thoroughly enjoying myself.  As usual I am not looking forward to heading back to the city tonight.  I just love being in CT in the summer! Home-cooked meals, the beach, visiting friends..it’s just too good.

Last night my mom prepared an amaaaazing dinner with a recipe taken from the most recent issue of Clean Eating Mag.  It was one of those meals that are so good you don’t even take the time to enjoy each bite – just SCARF it down.  Whoops.  Check out the ingredient lists we have here and head to your nearest store to pick them up!

Pineapple-Pepper Pork with Brown Rice & Sugar Snaps

Hands on time: 20 minutes

Total Time: 50 minutes

Here’s what you’ll need for the sauce:

  • 1 jalapeño chile pepper, seeded and finely chopped
  • 2 tbsp white balsamic or white wine vinegar
  • 2 tbsp organic evaporated cane juice
  • 1 1/2 tbsp low-sodium soy sauce
  • 2 tsp arrowroot powder
  • 2 tsp peeled and finely grated fresh ginger

 Usually my mom uses her own adaptations to recipes, but since this was a first-timer, she sticked to the recipe step by step!
On the side we also had a Watercress salad w/ Radish & English Cucumber (see picture).  Perfectly summer-fresh.
Highly recommend this for a family dinner with TONS of flavors in every bite.  Enjoy.
