- 2 slices whole grain bread
- 3 egg whites
- 3 slices fresh roast turkey, no salt added
- 1/4 cup baby spinach
- 3 tomato slices
- 1 slice swiss cheese
We all know how important breakfast is, right? If any of you are like me, you need some kind of association for something to stick, sound confusing? Maybe, but let me clarify; I’ve often read in the Eat Clean Diet series that breakfast means “to break the fast.” Ah, right, now I get it. I need breakfast to refuel my body after a restful night of not eating When you put it that way, it doesn’t make any sense to skip my morning meal. Why would I want to fuel myself with a caffeinated beverage only to end up shaky a few hours later? That doesn’t really sound like fuel, does it?
Onto my breakfast sandwich. This is a great way to start any day the clean way. On the days I’m working from home, I make this sandwich while I’m waiting for my morning tea to brew. Lucky me, I was able to put this sandwich on our deli menu, so when I’m working at the deli I just call it in.
Pop the bread in the toaster, heat up a small egg pan sprayed lightly with extra virgin olive oil or any other high heat oil. Cook egg whites pancake style flipping once. When toast is done, assemble your turkey, egg whites, veggies and cheese. I like to top it off with a few dashes of Siracha. Enjoy!
