- 1 cup unsalted almond butter, stirred well
- 3/4 cup sucanat
- 1 large egg, beaten
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 3 oz dark chocolate (70% cocoa or greater) shaved or broken into small pieces

Some of you may have seen on our instagram that I made these cookies during the recent blizzard, but you can look like a rock star today in 15 minutes. Get home a few minutes early, whip these up for your sweetie and look like you’ve been slaving all day. The original recipe is taken from “The Best of Clean Eating”
These cookies were a hit in our house with both the clean eaters and the not so clean eaters.
preheat oven to 350*
In a medium bowl, stir together first 5 ingredients until blended. stir in chocolate
drop dough by rounded tablespoons (tip: we use a small ice cream scoop) onto parchment lined or sprayed baking sheet. Bake for 10 to 12 minutes or until lightly browned. let cool on baking sheet for 5 minutes, move to wire rack to continue cooling.
Here’s a variation if you want to do 2 kinds:
Replace the almond butter with dark chocolate almond butter and add 1/2 cup shaved coconut, omit chocolate shavings….awesomeness!
