Veggie Prep.  My oh my, has it been awhile.  I am somebody that loves to make sure I get a good amount of veggies in each day.  Usually that involves heaps of spinach with my morning omelets, kale thrown in my smoothies, salads for lunch, or sautéed broccoli at dinner.  Every now and then though, I get the urge and find the spare time to buy market-fresh vegetables to chop and store at home.

I had to stop at the Post Office today, and on my walk home I saw a market with bright, beautiful vegetables on display and knew that I had to go in.  I was in heaven.  Tons of fruit, tons of produce, and nothing else!  A true market.  I’d already done my grocery shopping for the week (which included a ton of “bad” snacks – don’t worry, I’m still human), but I couldn’t pass up these gorgeous veggies.

The tried and true – carrots, celery & hummus.  Perfect to snack on while I was chopping away at the other veggies!

And to prep for Taco Night with Tommy..some Desert Pepper salsa, fresh guacamole, some squash to be sautéed as a side dish, and some diced peppers to throw on my tacos.

Mmmm, mmm.

I also grabbed a LOT of asparagus, and thought I would use some to make a quick and easy side dish.

Asparagus, mango, tomato & lime juice.  Tastes so fresh and reminds me that Spring and Summer are on the way.  P.S., mango tastes surprisingly great with asparagus – try throwing the mixture on top of a filet of Salmon!

Ahhh, I just love seeing this.  It did take me about 45 minutes to rinse & chop my veggies (well, plus take pictures), but its a one-and-done type of deal.  This is a great way to keep yourself accountable for eating vegetables!

I love raw veggies, but you can also cook any of these in under 5 minutes and it would be a great side dish for your meal.
