Hey There! We all know that keeping a food journal keeps you honest, right? That goes for me too. It was exciting for me to keep this photo journal yesterday. I’m a big believer of “we eat with our eyes first.” Looking back at these pics, I can’t wait to do it again.
The past weekend was pretty cool because I found a few new clean products I’m obsessed with. I know I said there was no healthy food at the Big E, that is true of a meal, but I did find two amazing new healthy products that I’ll be incorporating into my usual rotation.
First, I AM OBSESSED WITH THIS BREAD. It’s a white whole wheat with flax and golden raisins that was featured at the Big E. I purchased two loaves. I wasn’t quite sure what to do as the loaves are whole, so I took a chance and froze them as is. It worked! I’m able to slice off as much as I like and pop it into the toaster.
I haven’t done my weekly grocery shopping yet, so today’s meals were all about what’s on hand. As you know, I think some of the best meals are made when you’re put to the task of making something out of what we deem nothing.
Breakfast is served! New obsession numbero uno; one side smothered with natural peanut butter and the other our local orchards apple butter, shout out Bishops, we’ll be visiting you soon sided with the last of my fresh raspberries
Snack. Obsession Number Two; flavored roasted pumpkin seeds. I purchased 3 flavors at the Big E, Coco Joe (a chocolate, coffee), sea salt & super spicy. I was so happy to find out that they’re made just a few towns away from me. Today’s pick; a handful of Coco Joe
Lunch at the shop. We’re lucky enough to have local farmers that drop us their excess produce, yes that means at no charge Today’s crop yielded cucumbers, red peppers & tomatoes. I grabbed a scoop of tuna salad and chopped some romaine. Voila! I didn’t dress the salad as there is a little bit of mayo in our tuna.
Mid Afternoon Meal at the shop. We had a large taco bar party last night, so of course I pilfered from it. I grabbed a whole wheat tortilla and topped it with roasted corn, black beans, 1 grilled chicken breast, tomatoes, cilantro, jalepenos and a squeeze of fresh lime
Dinner before TRX class. Again components of the taco bar. Mark had given me a mixture of flank steak and chicken fajita before we left the shop. Since I had that banging wrap just a little bit earlier, I decided to save it for dinner. One of my favorite meals is to take his fajita mix and combine it with egg whites. I’ll usually add some brown rice, but today’s catering called for regular spanish rice, boo. That’s okay, just another reason to have yet another piece of obsession numero uno Okay, this pic, not so appealing, but it really did taste great.
Finally, a post workout protein shake. I’m on a mission to come up with some new concoctions so Obsession number 3 is just the ticket. I found this in Costco over the weekend, amaze! Silk Pure Almond Dark Chocolate Milk. Now I’m not a big chocolate fan, I’m more of a salty chip girl, but this stuff had me thinking back to my childhood bowl of Count Chocula….bahahaha, yes I used to eat that shit. I can really see adding it to my brown rice puffed cereal and feeling just like a kid again. Okay, so yes, you guessed it. It’s Dark Chocolate, banana smoothie….Look for the recipe later in the week with a few others.
