Dinner last night! Salmon, spinach, cous cous.  This meal is soooo simple and so amazing.  Baked the salmon in the oven at 400 degrees for 12 minutes, sauteed the spinach in EVOO until wilted to perfection, and cooked cous cous on the stovetop.

And now, to move things backwards…my breakfast this morning.

Went to the gym at 8am and needed some carbs after to fuel up.  I used sprouted grain mix for blueberry flax pancakes, and then used my Magic Bullet best friend to substitute sugary syrup with a blueberry puree over my pancakes.  Looks a little regurgitated, but tastes delicious!  The sausage is Apple Maple chicken sausage – again, delicious.

I always manage to produce a mess when I make pancakes (I’m no Matilda), but it’s worth it in the end.
