Man, I love Mondays.  I kinda feel bad, because I know most of you hate them.  However, don’t forget that I bartend on the weekends! While you’re galavanting, I’m slaving away – so I’ve earned my Mondays ;)

This particular Monday was relaxing.  I woke up, had my coffee and a big French Toast breakfast (the norm these days), and then headed downtown to meet up with Lindsay at Spice Market, my birthday destination this year! This place looks incredibly beautiful during the day, so I just cannot wait to see it all dim and sexy at night.  I’ve got a LOT of my best girls coming to this dinner on the 24th, so I’m very excited.  We’ll have a private room as well :)

Lindsay and I took advantage of being in the Meatpacking district and stopped to grab some lunch.  About halfway through we noticed the rainstorm that was a’brewin.  Lucky me, I didn’t bring an umbrella.  What a shocker as I am NEVER prepared for NYC’S weather.

The little kid at our table got a strawberry milkshake.  Haha.

After heading back uptown, I got ready for the gym and went to a pretty killer spinning class.  I had plans to do some ab-work after the class, but I was beat.  So to the grocery store it was!

I ran into one of my lifetime dance friends Erica at the store.  She’s lived in my neighborhood now for about 3 months and we run into each other EVERYWHERE.  It is so bizarre and it makes me so happy.

I got the usual weekly stock-up: yogurt, almond milk, eggs, veggies, fruit, hummus, Nature’s Path oatmeal and cereal, tofu, chicken, and brown rice.  I also got some snacks in the form of Goldfish and pretzels.  Mmm, mmm, mmm.

The newbies that I picked up were coconut flour, coconut oil, almond extract, dark chocolate chips, canned pumpkin and dark chocolate almond milk.  Sound like baking ingredients? Yep, you guessed it.  Except this time I was experimenting with no-bake recipes.

This chocolate-y/peanut butter/oat/coconut goodness is a no-bake chocolate bar experiment that ended in the land of Delicious.  I will share the recipe later this week!  This will be more of my dessert for the week, whereas another peanut butter/protein powder/pumpkin batch I made will be help for fuel during the day while I’m at work or out and about.
